Belle

The flour has been surprisingly easy to switch to. I think there’s a lot of fear around stepping into stone milled, local grains. I’ve found that it’s pretty much a plug and play. They’ve done a good job making pastry and bread flours that check all of the boxes.
— SCOTT SHANESYS

Belle Bakery is the gem of Charlottesville’s Belmont Village. Even veteran foodies will be delightfully surprised while browsing the case of artisan loaves and pastries on display.

Head baker, Scott Shanesys, could talk about the bread for hours, and sometimes does. After all, he might have spent more than 10 hours out of the day tending to the dough. His fate as a baker was sealed when he started baking at the age of 18. A decade later, Scott and his brother John found themselves steering their very own dream bakery café.

Belle’s dedication to craft can be seen in every item on their menu. Almost everything that comes out of the bakery is made with Deep Roots flour from the sourdough loaves, boules, and English muffins to the scones, bagels, and cookies. It’s better for flavor, better for your gut, and better for the earth, Scott says.

For a unique bite, try their iconic polenta sourdough loaf, made with Deep Roots products. Cooked corn incorporated into the dough as it rises gives the bread extra tackiness and grit while adding in another whole grain to the mix.
